Chittimuthyalu Mutton Biryani, the most famous rice recipe specially cooked with chittimuthyalu rice. Chitti Muthyalu is short grain rice which is a special rice grown in the southern part of India, near Kurnool. This biryani recipe is very simple and easy to cook at home with less ingredients.

Ingredients for Chittimuthyalu Biryani Recipe: 

  • 1 Kg Chitti Muthyalu Rice(Basmati Rice)
  • 500 gms Mutton
  • 1 tbsp Ginger garlic paste
  • 2 tbs Ghee
  • 4 tbs Oil
  • 2 teaspoon turmeric
  • 2 pieces cinnamon
  • 2 tbs red chilli powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon Coriander powder 
  • 4 Sliced Tomatoes
  • 2 Sliced Onions 
  • 5 green chilies
  • 6 clove
  • 2 green cardamom
  • 6 leaf bay leaf
  • 6 star anise
  • salt as required
  • ¾ Cup or 40g Mint leaves 
  • ¾ Cup or 40g Coriander leaves 

How to prepare Chitti Muthyalu Rice Mutton Biryani: 

  • Take a pressure cooker and add cleaned mutton, 1 spoon  Chilli powder, 1 spoon turmeric,1 spoon salt. 
  • Add 1 cup of water and cook for 15 mins.
  • Take a Pan or the cooking bowl and add 3 Tbs oil and 2 Tbs Oils.
  • After heating the oil add 2 pieces cinnamon, 6 leaf bay leaf, 6 star anise, 6 cloves, 2 green cardamoms and fry for 2 mins.
  • Add chopped Onions and 1 tbsp Ginger garlic paste fry for 1 min. 
  • Add Mint, Coriander leaves, Chopped chilies and chopped tomatoes and fry for 5 mins.
  • Add the boiled mutton pieces to the fried gravy and fry for 10 mins.
  • Add 1 tbsp salt, 1 tbsp Chilli powder, 1 tbsp garam masala, ½ tbsp turmeric powder, 1 tbsp Coriander powder and fry for 5 mins.
  • Add the washed rice and fry well for 2 mins.
  • Add 2 cups of water and the felt over mutton water into the rice. (to 1 cup of rice proportionately add 2 glasses of water). 
  • Cook the rice with the added water till the water observes and turns into biryani.
